This salad is great for the spring or summer, but is actually great anytime of the year. It will be a hit to serve at home or to bring to potlucks.
Broccoli Salad:
8 c. broccoli florets, chopped very small
1/2 c. red onion, peeled and finely diced
1/2 c. raisins
1/3 c. salted and hulled sunflower seeds
1/2 lb. bacon, cooked and crumbled into small pieces
Sweet Mayonnaise Dressing:
1 c. mayonnaise
1/4 - 1/3 c. white sugar
1-2 T. white vinegar
Broccoli Salad:
Cook bacon using your preferred method. Drain on a paper towel lined plate; crumble.
Place all of the broccoli salad ingredients in a medium sized bowl.
Dressing:
Mix the mayonnaise, sugar and vinegar together until smooth. Stir dressing into the salad ingredients. Cover the bowl.
Refrigerate salad overnight, if possible.
Serve cold.
