Believe it or not, not everyone is a fan of cake. So what to do for their birthdays? Serve this gorgeous, fun, easy to make Birthday Pie, of course! But, you don't have to celebrate a birthday to enjoy this pie. It's great to celebrate everything!
Ingredients
8 oz. package cream cheese, softened
1/2 t. pure vanilla extract
1/4 t. almond extract
3.4 oz. box INSTANT vanilla or French vanilla pudding mix
7 oz. jar marshmallow creme/fluff
1/2 c. rainbow confetti sprinkles, divided (1/3 c. for the mixture and 2 T. reserved for garnish)
4 c. Cool Whip, thawed (from an 8 oz. container plus another 1 c. from another container, for garnish)
9 inch store bought graham cracker crust

In a medium bowl, use a handheld electric mixer to beat the cream cheese, vanilla and almond extracts on medium-high speed for 1 to 1 1/2 minutes until smooth.
Sprinkle the instant pudding mix over the cream cheese; mix/beat for 1 more minute until well combined. Add the marshmallow fluff; mix just until incorporated.
Fold in 1/3 c. rainbow confetti sprinkles. Fold in the container of Cool Whip.
Spread the mixture into the graham cracker crust. Refrigerate for 8 hours to overnight.
Just before serving, add 1 c. thawed Cool Whip to a decorator’s bag or a quart-size ziplock bag with a corner snipped off. Using an even, steady pressure to pipe 8 dollops of Cool Whip around the edge of the pie, ensuring that each slice will have a dollop. Finally, pipe 1 dollop in the center.
Sprinkle the reserved 2 T. rainbow confetti sprinkles over the top of the pie.
Slice.
8 servings.
