Hot weather will soon be here and so is the need for frozen treats. With just 2 simple ingredients and a bit of time, you can make delicious, refreshing popsicles that taste like root beer floats.
4 c. root beer, favorite brand
3 c. vanilla ice cream
Pour the root beer into a large measuring cup or bowl. Refrigerate, uncovered, for 2 hours. This allows the root beer to go “flat” with as few bubbles as possible.
Just before making the popsicles, add the ice cream to a medium size bowl; for nice, creamy popsicles, let the ice cream sit at room temperature for about 5-8 minutes.
Whisk in the flat root beer with the ice cream until smooth.
Divide the root beer mixture evenly between the popsicle 10 molds. Add the popsicle sticks.
Freeze for at least 4 hours, or until the popsicles are frozen through.
When wanting to enjoy a popsicle, quickly run the popsicle mold under hot water to release it.
Keep popsicles frozen until ready to serve.

Tips:
Popsicles can be stored in the freezer for up to 3 months.
You can use ice trays and toothpicks if you don't have popsicle molds.
