Why make canned green beans when you can easily make fresh ones? They are delicious, savory with a bit of crunch and have a hint of garlic that is not overpowering. Your family will be happy that they can enjoy them year round.
1 lb. fresh green beans, ends discarded
1/4 c. water
2 T. olive oil
4 garlic cloves, minced
1 t. freshly ground black pepper, or to taste
1/2-1 t. kosher salt, or to taste
Place the green beans and the water in a large skillet over medium-high heat. Cover; cook until beans are bright green and still crisp, about 4 minutes.
Uncover; increase heat to high; cook until the liquid has evaporated, about 2 minutes.
Reduce heat to medium; add oil and garlic to the skillet; toss to coat. Cook, stirring frequently, until beans are crisp-tender, lightly browned, and beginning to wrinkle, 1 - 3 minutes. Remove from the heat.
Season generously with pepper and salt, to taste.
