This broccoli salad is made with fresh ingredients in a wonderful peanut sauce. It's easy to make and so delicious, there just might not be any leftovers.
Broccoli Salad:
1 large head broccoli, cut into small florets
ice water
1 c. shelled, cooked edamame
1/2 c. thinly-sliced green onions
1/2 c. peanuts
peanut sauce
sesame seeds, for garnish
Peanut Sauce:
1/4 c. natural peanut butter
1 T. rice vinegar
1 T. soy sauce
1 T. honey or agave nectar
1/8 t. toasted sesame oil
1–2 T. hot water, as needed to thin the sauce
Broccoli Salad:
Heat a large pot of water until boiling. Add the broccoli florets; boil for 30 seconds. Drain; transfer to a bowl of ice water to immediately stop the cooking process. Drain again.
Add the broccoli to the bowl with the remaining ingredients; add the peanut sauce; toss until combined.
Peanut Sauce:
Whisk together all of the ingredients until combined. If the dressing is too thick, whisk in hot water a tablespoon at a time, until it reaches the desired consistency.
Serve immediately, garnished with sesame seeds. if desired.
