2 c. brown rice
4 c. water
2 lb. lean ground chicken
2 c. spinach, chopped
1 large carrot, shredded (about 1 c.)
1 small zucchini, shredded (about 1 c.)
In a large saucepan, combine 4 c. water and brown rice; bring to a boil; lower heat to a simmer on medium-low to low heat; cover. Cook for 45 minutes or until rice is completely soft and cooked through and all the water is absorbed.
While the rice is cooking, cook the ground chicken in a large skillet over medium-high heat until no longer pink, about 6-8 minutes.
Add the spinach, carrot, and zucchini to the skillet with the chicken; cook until the spinach wilts, and the vegetables soften, about 3-4 minutes.
Remove the chicken and vegetable mixture from the heat; set aside to cool.
When the rice is done cooking, stir the rice and ground chicken mixture together. Let cool completely before serving to your dog or storing for later.
12 servings.
*Store leftovers in an airtight container in the refrigerator after cooling but no more than 2 hours after cooking.
