These buttery cookies have all of the flavors of a Kentucky Butter cake but in a cookie form. They're easily made with a white cake mix and topped with a delicious glaze, then sprinkled with powdered sugar.
Cookies:
1 box white cake mix
2 eggs, whisked
1/3 c. butter, melted
Glaze:
1/4 c. butter
1/2 c. granulated sugar
1 T. water
1 t. vanilla
powdered sugar
Cookies:
Preheat oven to 350 degrees F.
Combine cookie ingredients in large bowl; mix until completely incorporated. The dough will be thick.
Using a medium sized cookie scoop or a heaping tablespoon, scoop cookies onto a parchment lined cookie sheet.
Bake 7-8 minutes; remove from oven; let cool on the cookie sheet for 4-5 minutes before moving them to a cooling rack.
Repeat until all of the dough is baked.
Glaze:
Combine the glaze ingredients in a small saucepan; cook over medium-low heat until the sugar has dissolved, about 4 minutes, making sure to whisk the whole time.
Spoon a teaspoon of glaze over each cookie, spreading it out, if necessary. Let glaze set. Sprinkle with powdered sugar.
