Why buy packages of these brownies at the store when you can make them at home? They are chewy, choclately and fudgy with frosting and garnished with candy coated chocolate chips.
Brownies:
1/2 c. butter
1 c. semi-sweet chocolate chips
1/2 c. light brown sugar
1/4 c. cocoa powder
1/8 t. kosher salt
1/2 t. vanilla extract
3 eggs
Frosting:
2/3 c. heavy cream
2/3 c. semi-sweet chocolate chips
1/4 c. powdered sugar
1/4 c. cocoa powder
2-3 T. candy-coated chocolate chips or miniature M & M's
Brownies:
Preheat the oven to 325 degrees F. Line an 8 inch pan with parchment paper; set aside.
Melt the butter in a large saucepan over medium heat. When the butter has melted, add the chocolate chips; stir until melted. Remove from the heat; add brown sugar; stir until smooth. Add the cocoa powder; stir.
Stir ibn the vanilla; whisk in the eggs, 1 at a time. When the mixture is smooth and shiny, spread the mixture into the bottom of the prepared pan.
Bake 24-26 minutes, just until a wooden toothpick inserted in the middle shows moist crumbs.
Let bars cool completely before frosting.
Frosting:
While the brownies are baking, heat the heavy cream on the stove top over low heat until steaming, or in a medium glass bowl in the microwave until simmering. Remove from the heat.
Add the chocolate to the heavy cream; let sit for a few minutes. Stir or whisk to combine until the chocolate mixture is smooth and glossy.
Add the sugar and cocoa powder; stir until completely smooth.
Refrigerate the frosting for about 1 hour. Spread frosting over the cooled brownies.
Sprinkle the candy coated chocolates on the still wet frosting.
Refrigerate for at least 1 hour, allowing the frosting to set, before slicing into 12 bars.
