This side dish casserole is made without cream of chicken soup, since the original recipe was prepared without it. It's simple to make, so delicious and is ready in about 30 minutes.
8 oz. Colby cheese, freshly grated
1/2 c. butter, melted, divided
1 small onion, minced or grated
1 t. salt
1/2 t. black pepper
2 lb. bag frozen shredded hash browns
sour cream, for optional serving
Preheat oven to 350 degrees F. Spray a 13x9 inch baking dish with cooking spray.
In a large skillet, melt half of the butter; add hash browns; cook until browned.
Add cheese, butter, onion, salt and pepper to a bowl; stir.
To assemble the casserole, place the ingredients in layers in into the prepared dish, first, half of the hash browns, then the cheese, butter, and onion mixture; repeat.
Sprinkle more cheese on top, if desired.
Bake 20-25 minutes until heated through.
Serve with a dollop of sour cream, if desired.
