1 c. granulated sugar

Combine all ingredients in a medium bowl. Mix until fully combined. Refrigerate for 30 minutes. DO NOT skip this step. The air fryer makes the cookies spread and more crumbly than the oven, so this step keeps them from spreading too much and keeps them from being a crumbly mess when removing from the air fryer.

Using a 1 inch cookie scoop, or a heaping tablespoon, scoop the dough onto an air fryer parchment paper liner. Using a fork, press the cookie flat, first one direction, then again from the opposite direction to make a crosshatch pattern on top.

Place as many cookies in the air fryer as will fit, leaving 1/2 inch between each cookie.

Set the air fryer temperature to 350 degrees. You may need to adjust the temperature to your air fryer. Cook the cookies for 4 minutes before letting them rest in the air fryer for at least 4 minutes.

Repeat until all dough has been used. You can also refrigerate any leftover dough for up to 3 days in an airtight container for later use.

Store peanut butter cookies in an airtight container at room temperature for 3-5 days.

Makes about 21 cookies.
