You won't need a campfire to make these S'mores but you will need a freezer. They'll be a huge hit at your next pool party or family gathering.
12 sheets of graham crackers
1.4 oz. box sugar-free chocolate pudding mix
2 c. fat-free skim milk
6 oz. fat-free Cool Whip
Line an 8×10 baking pan with parchment paper.
In a bowl, stir together the pudding mix and milk; let sit to thicken for 5 minutes.
Evenly spread the pudding in the prepared baking pan. Put pan in the freezer 1 hour or until it's frozen.
Remove pan from the freezer. Spread the Cool Whip evenly over the pudding. Place back in the freezer until it's frozen.
Break up the graham crackers into 48 pieces; spread 24 of them over the top of the frozen Cool Whip.
Place a baking sheet/tray over the top of the baking pan; flip over. Remove and discard the parchment paper.
Place the remaining 24 graham crackers on top.
Carefully slice into 24 pieces.
