A store bought cake mix is used in this recipe because the homemade peanut butter icing is the star. The icing is boiled icing hardens like fudge on the cooled cake and tastes sweet and nutty.
1 yellow cake mix, made with ingredients on package directions
1.5 c. sugar
7 T. whole milk
2 T. shortening (or coconut oil)
2 T. unsalted butter
1/4 t. salt
1 t. vanilla extract
1/2 c. creamy peanut butter, not natural
Prepare cake mix in a 9x13 inch baking dish as directed on the package, about 23-28 minutes. Cool.
In a large sauce pan, combine sugar, milk, shortening, butter, and salt. Bring to a rolling boil over medium-high heat, stirring constantly to prevent scorching.
Once it reaches a boil, let it boil for 2-3 minutes without stirring.
Remove from heat; immediately whisk in the vanilla and peanut butter; beat until icing is smooth and starts to lose its shine.
Immediately pour it evenly onto the cooled cake. Don't try spreading the icing
Cool before serving.
10-12 servings.
