This versatile dish can be an appetizer, dip, salad or a side dish. It's delicious and can be ready to enjoy in about 10 minutes.
1 seedless cucumber, peeled and diced
2 medium ripe tomatoes, diced
2 avocados, peeled, diced, and drizled with fresh lime juice to prevent browning too quickly
15.5 oz. can black beans, rinsed and drained
2 T. red onion, minced
2 T. cilantro, minced (optional)
freshly squeezed juice of 2 limes
salt and freshly ground black pepper
Combine all the ingredients and season with salt and pepper, to taste.
Keep refrigerated until ready to serve.
