Lemon Pretzel Dessert

Description

This is such an easy dessert to make, you'll make it often. The hardest part is waiting for it to cool. It's sweet and salty, creamy and delicious and is the perfect summer dessert.

Ingredients

2 1/2 c. pretzels, crushed
2 t. vanilla extract
2/3 c. brown sugar
2 T. flour
1/2 c. butter, melted
8 oz. cream cheese, at room temperature
1 c. powdered sugar
8 oz. Cool Whip
22 oz. can lemon pie filling

Preheat oven to 375 degrees F.

Crush pretzels into small pieces using a food processor.

In a medium bowl, add crushed pretzels, vanilla, brown sugar, and flour; stir until combined.

Melt butter; add to the pretzel mixture; stir until combined. Spread and press the mixture into a 9×13 baking dish, in an even, smooth layer, reserving 1/2 c. for the topping.

Bake for 10 minutes. Let cool completely.

In a medium bowl, beat cream cheese until smooth; add powdered sugar; beat until combined; add the Cool Whip; mix until just combined.

When the crust has cooled completely, spread the cream cheese mixture over the pretzel layer. Top with the lemon pie filling, spreading evenly.

Sprinkle the reserved pretzel mixture over the top. Cover.

Refrigerate for 4 hours or overnight.

Serve, garnished with lemon slices, if desired.
