Turn your traditional corn on the cob into a spicy, salty, creamy, and buttery side dish. You can cook the corn in boiling water or on the grill and then slather it with the buttery, Cajun goodness.
6 fresh corn cobs, husks and silks removed
3 T. butter
1 T. Cajun seasoning
1 lime, sliced into wedges
minced parsley or cilantro, optional
Bring a large pot of well salted water to a boil; carefully add the corn cobs; boil 4-5 minutes, or until the corn is bright yellow and tender.
Meanwhile, melt the butter and Cajun seasoning together. If using the microwave, it takes about 45 seconds.
Carefully remove the corn cobs to a serving platter. Brush the corn with the butter mixture, squeeze some lime juice on the tops, then sprinkle with parsley or cilantro, if desired.
Serve warm.
