In a short while, you can have a cool, healthy, hydrating drink using just a few ingredients. Sip it poolside, at outdoor sports games, or anywhere.
1/2 medium cucumber, English or standard
8 c. cold water
lemon or lime slices, for serving
fresh mint
Wash and thinly slice the cucumber and the lemon.
Add the cucumber and lemon slices to a pitcher. Use a wooden spoon or muddler to lightly muddle/mash the cucumbers several times to release their juices.
Add the cold water. Refrigerate for at least 1 hour, although it is best after 2-3 hours. Add the fresh mint sprigs, if desired.
The flavor is best within the first day, but it can be kept up to 3 days refrigerated.
Serve with lemon slices or add a splash of sparkling water, if desired.
