Celebrate Memorial Day, July 4th or Labor Day with these little alcoholic gems for adults. They're maraschino cherries dipped in white chocolate and decorated in bright blue sanding sugar.
2 - 10 oz. jars maraschino cherries, with stems, each jar 30 – 33 count
1 package Ghirardelli white chocolate melting wafers
1/2 c. Malibu Caribbean Rum with Coconut Liquer

Remove the maraschino cherries from the jars with tongs; place cherries on a paper towel lined platter to dry.
Place the blue sanding sugar in a shallow dish; set aside.
Line a baking sheet with parchment paper; set aside.
When cherries have dried, add the white chocolate melting wafers to a large microwave-safe bowl; microwave in 20 second intervals, stopping to stir the white chocolate. When completely melted, remove the bowl from the microwave; stir in the rum.
Dip the cherry by the stem, two-thirds of the way down into the white chocolate; dip the cherry into the blue sugar. The top third of each cherry should remain red. Repeat until all the cherries have been dipped. Place the dipped cherries on the prepared baking sheet to set.
After about 30 minutes, when the chocolate has begun to set, place the cookie sheet in the refrigerator.
Refrigerate until ready to serve.
Serve.
