You may need to double this recipe, it's that good. With just a few minutes of preparation, you will have a delicious dessert, snack, or appetizer that everyone will love. Who knew that bruschetta isn't only made with tomatoes?
4 oz. mascarpone cheese
2 T. honey
2 T. lemon juice, divided
1 1/2 c. sliced fresh strawberries
2 T. sugar
1/4 c. fresh minced basil
12 slices French bread
2 T. butter, melted
Set the oven to broil.
In a small bowl, beat the mascarpone cheese, honey, and 1 T. lemon juice until smooth; set aside.
In another small bowl, mash the strawberries slightly with the sugar and remaining 1 T. lemon juice. Let stand 5 minutes until their juices release; stir in the basil.
Place the French bread slices on a baking sheet; brush each slice with melted butter.
Broil the bread on high 1 minute until toasted.
Spread the mascarpone mixture on each of the toasted bread slices; top with the strawberry mixture.
Serve immediately.
