Hot weather will soon be here and so is the need for a refreshing beverage. Lemons and cucumbers are perfectly paired to make this easy, delicious lemonade.
1 c. water
1/2 c. white sugar
1 cucumber, sliced (no need to peel)
6 lemons, juiced plus more for garnish, if desired
ice, for serving
Simple Syrup:
Combine the water and sugar together in a saucepan over medium heat; heat until just about ready to boil and sugar has dissolved.
Refrigerate until cool, about 30 minutes.
Blend the cucumber in a blender or food processor until mashed into a pulp; pour pulp into a fine mesh strainer over a bowl; allow to sit until there is about 2/3 c. cucumber juice in the bowl, about 15 minutes.
Stir the simple syrup, cucumber juice, and lemon juice together in a pitcher.
Serve cold with ice cubes, garnished with lemon and cucumber slices, if desired.
