This side dish can be ready to serve in about 35 minutes. It's perfect for summertime get togethers like graduations, pool parties, and reunions.
8 oz. bacon slices
3/4 c. mayonnaise
1/4 c. Ranch dressing
2 T. lemon juice
1/2 t. salt
1/4 t. freshly ground black pepper
12 oz. bowtie pasta
1 pint grape or cherry tomatoes
1/3 c. diced red onion
2 c. fresh spinach, packed
Cook the bacon in a large skillet over medium heat until brown and crispy; transfer to a paper towel lined plate to drain. Chop or crumble the bacon into pieces.
While the bacon is cooking, make the dressing. Stir together the mayonnaise, Ranch dressing, lemon juice, salt, and pepper; set aside.
Bring a large pot of well salted water to a boil. Once boiling, add the pasta; cook 7-8 minutes or until tender. Drain; rinse with cool water; drain.
While the pasta is cooking, slice the tomatoes in half, dice the onion, and chop the spinach.
When the pasta has drained, add it to a large bowl with the spinach, tomatoes, onions, and dressing; stir.
Let the pasta sit for 10-15 minutes for the flavors to blend together; stir again.
Serve.
