Description
This crispy, delicious asparagus requires no frying, just the oven, for a healthier dish. It's buttery, garlicky, cheesy, crunchy and flavorful.
Ingredients
- 2 lb. asparagus, washed, dried and woody ends discarded
- 3 T. unsalted butter, melted
- 2 T. olive oil
- 5 cloves garlic, minced
- 1/2 c. freshly grated Parmesan or Parmigiano-Reggiano cheese
- 1/2 c. Panko bread crumbs
- 2 t. fresh parsley, finely chopped
- 1/2 to 3/4 t. salt
- 1/4 t. black pepper
Steps
- Preheat the oven to 400 degrees F. Lightly grease a baking sheet with non-stick cooking spray.
- Place the trimmed asparagus in a large bowl. Add the remaining ingredients. Use your hands to evenly coat the asparagus.
- Transfer the asparagus and bread crumb mixture to the prepared baking sheet; arrange in an even layer.
