This crispy, delicious asparagus requires no frying, just the oven, for a healthier dish. It's buttery, garlicky, cheesy, crunchy and flavorful.
2 lb. asparagus, washed, dried and woody ends discarded
3 T. unsalted butter, melted
2 T. olive oil
5 cloves garlic, minced
1/2 c. freshly grated Parmesan or Parmigiano-Reggiano cheese
1/2 c. Panko bread crumbs
2 t. fresh parsley, finely chopped
1/2 to 3/4 t. salt
1/4 t. black pepper
Preheat the oven to 400 degrees F. Lightly grease a baking sheet with non-stick cooking spray.
Place the trimmed asparagus in a large bowl. Add the remaining ingredients. Use your hands to evenly coat the asparagus.
Transfer the asparagus and bread crumb mixture to the prepared baking sheet; arrange in an even layer.
Bake for about 10 minutes, or until the asparagus is just tender.
Broil/grill for 2-3 minutes until the bread crumbs are golden brown and asparagus has reached desired doneness.
Serve immediately.
