If you love a good salad, this one is for you. It's healthy, delicious and so easy to make, you'll make it often.
Strawberry Balsamic Dressing:
1 c. fresh strawberries
1/4 c. balsamic vinegar
1/4 c. extra-virgin olive oil
1 T. Dijon mustard
1 clove garlic, minced
1/4 t. salt
1/4 t. black pepper
Salad:
2 c. cooked chicken, chopped
4 c. chopped romaine lettuce
2 c. chopped fresh strawberries
1/2 c. dried cranberries
1/4 c. sliced red onion
1/4 c. crumbled goat cheese
1/4 c. sliced almonds
Dressing: Place the strawberries, balsamic vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper into a food processor or blender; pulse/blend until it’s nice and smooth; set aside.
Salad:
In a large bowl, toss the chopped chicken, romaine lettuce, strawberries, dried cranberries, red onion slices, crumbled goat cheese, and sliced almonds together; stir.
Pour the dressing over the salad; toss to coat everything evenly. If preferred, drizzle the dressing on individual servings.
