Greek Salad

Description

Not only is this Mediterranean salad delicious, it's healthy with crunchy, vibrant veggies. You could serve it as described or on a bed of your favorite greens or lettuce.

Ingredients

3 T. extra virgin olive oil
3 T. red wine vinegar
2 t. Dijon mustard
1 t. dried oregano
Kosher salt
freshly ground black pepper
1 large cucumber, coarsely chopped
1 medium green bell pepper, ribs and seeds removed, thinly sliced
1 small red onion, thinly sliced
12 oz. tomatoes, preferably a mix of sizes, halved, quartered, or sliced
2/3 c. Kalamata olives, pitted
6 oz. feta cheese, cut into thin slabs

Whisk the extra virgin olive oil, red wine vinegar, Dijon mustard, and dried oregano in a large bowl until emulsified; season with salt and pepper.

Add the cucumber, green bell pepper, red onion, tomatoes, and Kalamata olives to the dressing; toss to coat. Add the feta cheese; toss.

Serve.
