This simple to make side dish goes with just about any main dish. It takes just a few ingredients and about 30 minutes to prepare, so it's one that you'll want to add to your rotation.
3 c. chicken stock (or vegetable stock)
1 1/2 c. Jasmine rice
1 T. low-sodium soy sauce
1 T. sesame oil
1/2 c. frozen peas
1/2 t. kosher salt, or as needed
2 green onions, thinly sliced
Combine the rice and the chicken stock in a large saucepan;, cover; bring to a boil; reduce heat to low; simmer 18 minutes.
Stir the rice; check for tenderness. If the liquid has been absorbed, drizzle on the soy sauce and sesame oil; toss to coat.
Add frozen peas; stir. The heat of the rice will cook the peas in 1-2 minutes.
Season to taste with salt, if needed. Keep covered until ready to eat.
Serve garnished with green onions.
