Serve this pasta salad at your next gathering. The bowtie pasta is tossed with crispy bacon, romaine lettuce, avocado, tomatoes, and feta cheese and a creamy dressing.
8 oz. bowtie pasta
1/4 c. light mayonnaise
1/4 c. milk
1 1/2 t. Dijon mustard
2 cloves garlic, minced
3/4 t. salt
4 c. lightly packed sliced romaine lettuce
1/2 lb. sliced bacon, crisply cooked and chopped
2 large tomatoes, sliced
2 avocados, diced
1/4 c. feta cheese crumbled
black pepper, to taste
Cook pasta in well salted boiling water according to package directions, about 11 minutes; drain; rinse under cold water until cooled.
In a large bowl, whisk together mayonnaise, milk, Dijon mustard, garlic and salt. Add the romaine, bacon, tomatoes and avocados; toss lightly until well coated.
Refrigerate until ready to serve.
Serve sprinkled with feta cheese and black pepper.
