Patriotic Flag Cake Pops

Description

Make these fun red, white and blue cake pops to celebrate the Fourth of July, Flag Day or Memorial Day. They are a little more work than making a boring cake, but they are guaranteed to make your party spectaucular.

Ingredients

1 box yellow cake mix or favorite flavor
water, vegetable oil and eggs called for on cake mix box
12 oz. tub whipped vanilla frosting
14 oz. bag red candy melts
14 oz. bag white candy melts
1 c. blue candy melts from a 14 oz. bag
decorating decors red sugar crystals, if desired
white sparkling sugar, if desired
decorating decors blue sugar crystals, if desired

Preheat oven to 350 degrees F.

Make and bake the cake mix as directed on the box for a 13x9 inch pan, using water, oil and eggs. Cool completely, about 1 hour.

Line a cookie sheet with waxed paper.

Crumble the cooled cake into large bowl. Add frosting; mix well. Using a 1 inch scoop, shape mixture into balls; place on the prepared cookie sheet. Freeze for about 45 minutes or until firm. When firm, transfer to the refrigerator.

In a 1 QT. microwavable bowl, microwave red candy melts uncovered on High for 1 minute 30 seconds; stir. Continue microwaving and stirring in 15 second intervals until melted and smooth.

Remove a few balls from refrigerator at a time. Using 2 forks, dip and roll 1 ball at a time in the red coating; return to cookie sheet; immediately sprinkle with red sugar crystals, if using. Dip a total of 28 cake balls in the red coating.

Repeat melting instructions for white candy melts. Dip a total of 23 cake balls in the white coating; immediately sprinkle with sparkling sugar, if using.

Repeat melting instructions for the blue candy melts. Dip the remaining 12 cake balls in the blue coating; immediately sprinkle with blue sugar crystals, if using.

Refrigerate all coated cake balls about 10 minutes or until set.

On a serving tray, arrange the cake balls in a flag pattern in 7 rows, starting from the bottom: 1 row of 9 red balls, 1 row of 9 white balls, 1 more row of 9 red balls, 1 more row of 9 white balls, 1 row of 4 blue balls and 5 red balls, 1 row of 4 blue balls and 5 white balls, and 1 more row of 4 blue balls and 5 red balls.

Store tightly covered.

Serve at room temperature.

Tips:

It might be best if the cake balls are COMPLETELY frozen or they start to fall apart when dipping them, then the melt gets chunky and ends up shot.

Lollipop sticks can be inserted before coating, if desired.

To keep the the candy coating smooth, place a bowl in pan of hot water while dipping, or it can be reheated in the microwave if too thick to coat.

Cake balls are great made ahead and frozen, wrapped tightly, until needed.

Decorate with red, white and blue candy sprinkles instead of colored sugar or use star-shaped candy sprinkles.
