Whether it's Christmas, Christmas in July or not Christmas at all, you'll love these cookies. They are the perfect dunking cookie, are dense but not heavy, with lots of sweet goodness.
2/3 c. butter
2/3 c. brown sugar
2 eggs
1 1/2 c. oats
1 1/2 c. flour
1 t. baking soda
1/2 t. salt
6 oz. bag dried cranberries
2/3 c. white chocolate chips
Preheat oven to 375 degrees F.
Beat butter and sugar together with a mixer until fluffy. Add eggs, mixing well. Mix oats, flour, baking soda and salt; add to the butter mixture. Stir in cranberries and white chocolate chips. Drop by spoonfuls on an ungreased cookie sheet.
Bake 10-12 minutes or until golden brown. Let cool.
Serve.
