Soda cakes have been made by Southerners since the 1950's. Soda provides moisture, lift, air and sweetness. It definitely is a crowd pleaser.
Cola Cake:
1 c. butter, plus more for the greasing the pan
2 c. all-purpose flour, plus more for the pan
2 c. granulated sugar
2 T. cocoa powder
1 c. cola soft drink, such as Coca-Cola
1/2 c. buttermilk
1 t. baking soda
2 eggs, lightly beaten
1 T. pure vanilla extract
1 1/2 c. miniature marshmallows
Chocolate Cola Icing:
1/2 c. butter
3 T. cocoa powder
6 T. cola soft drink, such as Coca-Cola
16 oz. package powdered sugar, sifted
1/2 t. vanilla extract
Cake:
Preheat oven to 350 degrees F. Grease (butter) and flour a 9x13 inch pan.
Sift flour and granulated sugar in a bowl.
Heat butter, cocoa powder and cola to a boiling point in a small pan; pour over the flour/sugar mixture. Add buttermilk, baking soda, eggs, vanilla and marshmallows The batter will be thin and the marshmallows will float to the top. That's okay. Pour batter into the prepared pan.
Bake until cake is done, 30 - 35 minutes. Remove from the oven. Poke holes in the cake with the handle of a wooden spoon while the cake is still hot.
Chocolate Cola Icing:
Combine butter, cocoa, cola, powdered sugar and vanilla in a pan; heat until it comes to a boil.
Pour the icing over the cooled cake.
Serve.
