This salad is simple to make with cucumber, tomatoes and red onion in a red wine vinegar, olive oil and seasonings. It's delicious and refreshing, which makes it perfect for summertime meals.

Ingredients

1 large cucumber, peeled, halved and thinly sliced
4 tomatoes, halved and thinly sliced
1 small red onion, peeled and thinly sliced
1 clove garlic, minced
2 T. olive oil
1 T. red wine vinegar
1 t. dried Italian seasoning
½ t. freshly ground black pepper
¼ t. sea salt
pinch sugar

Place the cucumber, tomatoes, onions and garlic in a bowl. Toss with olive oil, red wine vinegar, Italian seasoning, pepper, salt and sugar.

Let stand at room temperature or place in the refrigerator, about 15-30 minutes before stirring and serving.
