These zucchini fries are a healthier version of the classic ones that are fried in oil. They are still delicious and crispy, and make a great appetizer, side dish or snack.
2 medium zucchini
1/2 c. all-purpose flour
1 T. Italian seasoning
1 t. garlic powder
1/2 t. kosher salt
2 large eggs
1 c. panko bread crumbs
1/3 c. grated Parmesan cheese
Rinse and pat zucchini dry. Cut the zucchini into sticks, about 4-5 inches long, and 1/2 inch thick.
Set up 3 shallow bowls for dipping. In the first bowl, add the flour, Italian seasoning, garlic powder, and salt;stir.
In another bowl, whisk the eggs.
And in the last bowl, mix together the bread crumbs and Parmesan cheese.
Coat the zucchini sticks first in the flour, then dipped into the eggs, and lastly in the grated cheese and bread crumb mixture.
Place them in a lightly sprayed air fryer basket. Air fry at 380 degrees F for 8-10 minutes until golden brown and crispy.
