These delicious potatoes are easy to make in the slow cooker and provide a comforting side dish to complement just about any main course.
6 large potatoes, thinly sliced
1 packet Lipton Onion Soup mix
1/3 c. butter, melted
1 c. shredded Cheddar cheese, optional
1/2 c. vegetable broth (or chicken broth) or water
salt and pepper, to taste
non-stick cooking spray or butter, for greasing
Grease the inside of a slow cooker with non-stick cooking spray or butter to prevent sticking.
Wash and peel the potatoes; thinly and evenly slice the potatoes.
In a large bowl, combine the potatoes with the melted butter, making sure that each slice is coated. Sprinkle the onion soup mix over the potatoes; stir well.
If desired, add the Cheddar cheese to the potato mixture, mixing well.
Carefully layer the potatoes in the slow cooker; pour the broth or water over the top, helping to steam the potatoes to a tender finish while cooking.
Cover; cook on Low 5 to 6 hours or on High 2 to 3 hours, depending on the slow cooker and the thickness of the potato slices.
When the potatoes are tender and cooked through, taste and adjust seasoning with salt and pepper.
Serve hot.
