Serve these tasty little gems as an appetizer, a snack or as a side dish. They're great with a Ranch dressing, marinara sauce, tzatziki sauce or no dipping sauce at all.
1 medium size cauliflower head, cut into bite-sized florets
1 c. shredded Cheddar cheese
1/2 c. grated Parmesan cheese
1/2 c. bread crumbs
2 large eggs
1 t. garlic powder
1 t. onion powder
1/2 t. smoked paprika
1/2 t. salt
1/4 t. black pepper
freshly chopped parsley, for garnish
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
In a large bowl, combine the Cheddar cheese, Parmesan cheese, bread crumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
In another bowl, beat the eggs.
First, dip each cauliflower floret into the beaten eggs, then roll in the cheese/bread crumb mixture, making sure that each piece is well coated.
Place the coated florets on the prepared baking sheet in a single layer.
Bake 20-25 minutes, or until the cauliflower bites are golden brown and crispy.
Serve, garnished with fresh parsley and your favorite dipping sauce, if desired.
