This light and refreshing salad will become a new summer favorite on a hot day. It's made with watermelon, feta cheese, onion, cucumber and a serrano or jalapeño pepper for a little bit of a kick.
Dressing:
2 T. extra-virgin olive oil
3 T. freshly squeezed lime juice
½ garlic clove, minced
1/4 t. sea salt
Salad:
5 c. cubed watermelon
heaping 1 c. diced English cucumber
1/4 c. thinly sliced red onion
1/3 c. crumbled feta cheese
1 avocado, cubed
1/3 c. torn fresh mint or basil leaves
1/2 jalapeño or serrano pepper, thinly sliced, optional
sea salt
Dressing:
In a small bowl, whisk together the olive oil, lime juice, garlic and salt.
Salad:
Arrange the watermelon, cucumber, and red onions on a platter; drizzle on half of the dressing.
Top with the feta cheese, avocado, mint or basil, and serrano pepper, if using.
Drizzle on the remaining dressing and season to taste.
Serve.
