This beautiful salad is fancy enough to serve company or for holidays, but easy enough to serve anytime you want a delicious salad. The sweet dressing is perfectly balanced with the salty cashews.
Salad:
10 c. chopped romaine lettuce or mixed greens
1 c. diced Swiss cheese
1 diced apple, with the peeling
1 pear, peeled and diced
1 c. lightly salted cashews
1 1⁄2 c. dried cranberries
Dressing:
2 -3 T. poppy seeds
1⁄2 c. sugar
1⁄3 c. apple cider vinegar
2 t. lemon juice
2 T. chopped onions
1⁄2 t. salt
2⁄3 c. olive, canola or vegetable oil
Toss the salad ingredients together in a large bowl.
In another container, whisk together the dressing ingredients.
Toss the salad with the dressing or allow each person to add the dressing to their individual salads.
8-10 servings.
*The dressing will stay fresh in the refrigerator for a long time.
