This is an old 16th century British dessert that has been reinvented. It's deliciously made with apples, spices, French bread crumbs and apricot jam.
3 c. medium apples, thinly sliced
3 c. bread crumbs, made from French bread
1 c. sugar, divided
1 1/4 t. cinnamon, divided
1/4 t. ginger
1/4 t. nutmeg
1 t. lemon zest
5 T. butter
1/2 c. apricot jam
1 c. whipped cream or vanilla ice cream, for serving
Preheat oven to 350 degrees F. Butter a casserole dish.
Place torn french bread pieces in food processor; crumb into small pieces.
Melt the butter in a pan; toss; brown the bread crumbs until golden, and crisped. Toss with 1/4 c. sugar and 1/4 t. cinnamon; set aside.
Wash and slice the apples; set aside.
Mix 3/4 c. sugar, 1 t. cinnamon, nutmeg, ginger, andlemon zest together in a bowl.
Heat apricot jam in the microwave until thinned out a little bit.
Place 1 c. bread crumbs on the bottom of casserole dish.
Place half of the apple slices on top of the bread crumbs. Sprinkle half of the sugar mixture over the apples. Spoon half the apricot jam over the top.
Repeat layering until crumbs are on the top.
Bake for about 40-45 minutes or until the apples have softened.
Serve with whipped cream or vanilla ice cream.
