This French-Style Potato Salad with has no mayonnaise but is made with a Dijon mustard vinaigrette dressing. It's a lighter potato salad with lots of fresh herbs.
Salad:
1 1/2 lb. potatoes, diced (peeled if desired)
3 T. chopped parsley
3 T. chopped dill
3 green onions, thinly sliced
1 shallot, finely diced (optional)
1/4 c. diced dill pickles, optional
Dijon Mustard Vinaigrette:
2 T. olive oil
2 T. red wine vinegar or sherry vinegar
1 T. Dijon mustard
1 T. grainy mustard
1 clove garlic, minced or grated, optional
1 T. dill pickle juice, optional
salt and pepper, to taste
Place the diced potatoes in a large pot; cover with water. Bring to a boil; reduce heat; simmer until tender but still firm, about 10-15 minutes. Drain; cool slightly.
Dijon Mustard Vinaigrette:
In a small bowl, whisk together olive oil, vinegar, both mustards, minced garlic, and dill pickle juice. Season with salt and pepper. Adjust seasonings and acidity as needed to desired taste.
Salad:
In a large bowl, add the slightly cooled potatoes, parsley, dill, green onions, shallot, and pickles. Pour the vinaigrette over the potatoes; gently toss until everything is well coated. Taste and adjust the seasoning as necessary.
Serve the salad warm or cold. If serving it cold, allow it to marinate in the refrigerator for at least 1 hour so that the flavors meld.
Serve garnished with additional fresh herbs, if desired.
