Description
This French-Style Potato Salad with has no mayonnaise but is made with a Dijon mustard vinaigrette dressing. It's a lighter potato salad with lots of fresh herbs.
Ingredients
- Salad:
- 1 1/2 lb. potatoes, diced (peeled if desired)
- 3 T. chopped parsley
- 3 T. chopped dill
- 3 green onions, thinly sliced
- 1 shallot, finely diced (optional)
- 1/4 c. diced dill pickles, optional
- Dijon Mustard Vinaigrette:
- 2 T. olive oil
- 2 T. red wine vinegar or sherry vinegar
- 1 T. Dijon mustard
- 1 T. grainy mustard
- 1 clove garlic, minced or grated, optional
- 1 T. dill pickle juice, optional
- salt and pepper, to taste
Steps
- Place the diced potatoes in a large pot; cover with water. Bring to a boil; reduce heat; simmer until tender but still firm, about 10-15 minutes. Drain; cool slightly.
- Dijon Mustard Vinaigrette:
- In a small bowl, whisk together olive oil, vinegar, both mustards, minced garlic, and dill pickle juice. Season with salt and pepper. Adjust seasonings and acidity as needed to desired taste.
