Southern Pea Salad

Description

This pea salad is creamy and flavorful, with sweet peas, chopped bacon or ham, Cheddar cheese, green onions, mayonnaise and lots of wonderful seasonings. Serve it as a side dish at your next gathering or meal.

Ingredients

16 oz. frozen sweet peas, thawed (or canned peas)
2 hard-boiled eggs, chopped
4 - 6 bacon slices, crisply cooked, crumbled or 1 c. cooked, chopped ham, optional
1/2 c. chopped green onions
1 c. shredded Cheddar cheese
1/4 t. black pepper
1/2 t. salt
1/4 t. garlic powder
1/2 t. celery seeds or 1/2 c. chopped celery
dash cayenne pepper
1/2 c. mayonnaise
1/2 c. sour cream

Salad:
In a large bowl, combine the thawed peas, hard-boiled eggs, bacon or ham, green onions, and Cheddar cheese.

Season with black pepper, salt, garlic powder, celery seeds (or chopped celery), and a sprinkle of cayenne pepper; stir well.

Dressing:
In another bowl, whisk together the mayonnaise and sour cream. Pour dressing over the pea mixture; gently stir.
Cover the salad.

Refrigerate for at least 1 hour before serving for the flavors to blend together.

Serve.
