Enjoy this light, healthy salad for lunch or as part of dinner. It's filled with fresh mango, Honeycrisp apples, Parmesan Reggiano cheese, and lots of arugula. It's served with Honey Avocado and Thyme salad dressing.
Salad:
2 c. fresh arugula
1 mango, sliced
1 Honeycrisp apple, sliced
1/2 c. cherry tomatoes, halved
2 T. Parmesano Reggiano cheese, shredded or shaved
pinch of sea salt
pinch of freshly ground black peppercorns
1/3 c. Honey Avocado and Thyme salad dressing
Honey Avocado and Thyme Salad Dressing:
1 ripe avocado
1 T. mayonnaise
2 t. honey
1 t. extra virgin olive oil
1/8 t. sea salt
1/8 t. freshly ground black peppercorns
Dressing:
Add the flesh of the avocado, the mayonnaise, honey, extra virgin olive oil, sea salt, and freshly ground black peppercorns into a food processor.
Pulse until smooth and creamy and able to coat the back of a spoon, but still pourable.
Salad:
Wash, rinse and thoroughly drain the arugula.
In a serving bowl, toss the arugula with the 1/3 c. salad dressing until the arugula is evenly coated.
Top with slices of mango, apples, and cherry tomatoes and Parmesan Reggiano cheese.
Drizzle any remaining dressing over salad when ready to serve.
Serve.
