All you need are 5 ingredients to make these peanut butter cookies. In about 20 minutes, they're ready for you to enjoy.
1 c. creamy peanut butter, NOT natural peanut butter
1/2 c. granulated sugar
1/2 c. light brown sugar
1 large egg
1 t. vanilla extract
Preheat oven to 350 degrees F. Line a large cookie sheet with a silicone baking mat or parchment paper; set aside.
In the bowl of a stand mixer or in a large bowl using a hand mixer, beat the peanut butter, white sugar, and brown sugar together on High until creamy and smooth, 2-3 minutes. Add the egg and vanilla; mix until combined.
Spoon the dough in heaping tablespoons; roll into 1 1/4 inch balls; place on the prepared cookie sheet about 2-3 inches apart. Use a fork to press the cookies down, creating a cross-hatch pattern.
Bake for about 8 minutes.
Allow cookies to cool completely on the cookie sheet before removing. Store in an airtight container.
