Don't waste those pumpkin seeds when carving your Jack-o-Lantern. You can make a quick and delicious snack with them, some seasonings and a bit of butter or oil in your air fryer.
1 c. pumpkin seeds
1 1/2 t. butter or olive oil
1/4 t. garlic powder
1/4 t. salt
1/8 t. black pepper, optional
Use a sharp knife to cut a circle around the stem; remove the top. Use a spoon to scrape and remove the pulp and seeds from the inside of the pumpkin. Transfer the pulp and seeds to a big bowl of water. If preferred, you could also cut a circle in the bottom of the pumpkin instead of the top.
Separate the pulp from the seeds; transfer the seeds to a colander to rinse them with cold water.
Lay the clean seeds out on towels and make sure that they are completely dry.
If using butter, melt it in a bowl large enough to hold the pumpkin seeds; add the dry pumpkin seeds, or use olive oil instead of the butter. Add the seasonings: stir well until all the seeds are completly coated.
Evenly spread out the seeds in the fryer basket. Cook at 360 degrees F for 10-15 minutes. You might need to cook in several batches so you don't overcrowd the seeds. Shake the basket occasionally to move the seeds around for even roasting.
Check to see if the seeds are crisp to your liking. If not, air fry them for another 3-5 minutes.
Let seeds cool. Adjust the seasoning to taste.
Makes about 1 cup.
