These little gems are easy and quick to prepare. They're crunchy, sweet and salty little treats that everyone will enjoy.
1/2 c. creamy peanut butter
3 T. salted butter, softened
2 T. granulated white sugar
1/2 t. salt
3/4 c. powdered sugar
72 mini-twist pretzels
3/4 c. dark chocolate chips
sea salt, optional
Use a stand or hand mixer to beat the peanut butter, butter, granulated white sugar, and salt together in a medium sized bowl, until fully combined.
Gradually beat in the powdered sugar on low speed until a soft dough is reached.
Line 1 or 2 large sheet pans that will fit in the freezer with parchment paper.
Scoop out 1/2 T. peanut butter mixture; roll into a ball.
Create a sandwich using 2 pretzels with the peanut butter ball on the inside; gently press the pretzels together until it's 1/2 inch thick. Repeat with the remaining peanut butter dough and pretzels, making about 36 sandwiches total.
Place all sandwiches on the prepared sheet pan. Freeze for 30 minutes (or use the refrigerator for this step).
Once the sandwiches have set, place the dark chocolate chips in a microwave safe bowl; microwave in increments of 15 seconds until fully melted, about 2-3 minutes total, stirring in-between each interval so that the chocolate doesn’t seize up.
Once the chocolate has melted, dip each peanut butter pretzel sandwich halfway down into the chocolate; place back on the parchment paper; sprinkle with sea salt, if desired.
When finished, return the sheet pan to the freezer for 15 minutes to set.
Serve immediately or store in the refrigerator until ready to serve.
Serve chilled.

Storage: Store the pretzel bites in the refrigerator in an airtight container or a zip lock bag. They will last for 1-2 weeks.
To Freeze: Freeze the pretzel bites in a freezer-safe container for up to 3 months. Serve frozen or place them in the refrigerator to soften up before serving.
