Don't just serve guacamole and chips during this spooky season, make it fun by using the guacamole as a witch's face and arranging veggies and blue chips around it.
Guacamole:
3 medium ripe avocados, seeds discarded and scooped from peel, smashed (reserve a slice for the nose)
1 garlic clove, minced
2 Roma tomatoes, seeded and diced
1/4 c. onion, finely diced
freshly squeezed juice from 1/2 lime
1 - 2 T. fresh cilantro, minced
1/2 jalapeno, seeds and membrane discarded, finely diced, optional
Witch:
blue corn tortilla chips, for the hat
1 black olive, cut in half through the middle, for the eyes
1 slice avocado, for the nose
1 slice red bell pepper, for the mouth
carrot sticks, for the hair
Guacamole:
Place all guacamole ingredients in a large bowl.
Smash avocado with a fork or pastry blender; stir together until blended.
Guacamole is best if served immediately.
Store it in an airtight container in the refrigerator, if needed. Place a piece of plastic wrap on top of the guacamole, directly touching it to keep it from browning so quickly. Guacamole starts to discolor within 1 day.
On a large plate or platter, place the guacamole in the center in a round or oval shape for the face. Add carrots sticks on the sides for the hair; the black olives for the eyes; a slice of avocado for the nose; a slice of red bell pepper for the mouth. Right before serving, add the blue corn tortilla chips of the hat.
