This delicious soup comes together quickly. It's an economical dish made with ground beef, fresh veggies, canned tomatoes and seasonings.
1 lb. ground beef
3-4 c. water (use less for a thicker soup)
14 1/2 oz. can diced tomatoes, undrained
3 medium carrots, sliced
2 medium Yukon Gold potatoes, peeled and cubed
1 medium onion, chopped
1/2 c. chopped celery
4 t. beef bouillon granules
1-1/2 t. salt
1/4 t. black pepper
1/4 t. dried oregano
1 c. fresh or frozen green beans
In a large saucepan, brown beef; discard excess grease. Add the remaining ingredients, except for the green beans; bring to a boil.
Reduce heat; cover; simmer 15 minutes or until potatoes and carrots are tender.
Add green beans. Cover. Simmer 15 minutes or until the green beans are tender.
8 servings - 2 quarts.
