Description
This delicious soup comes together quickly. It's an economical dish made with ground beef, fresh veggies, canned tomatoes and seasonings.
Ingredients
- 1 lb. ground beef
- 3-4 c. water (use less for a thicker soup)
- 14 1/2 oz. can diced tomatoes, undrained
- 3 medium carrots, sliced
- 2 medium Yukon Gold potatoes, peeled and cubed
- 1 medium onion, chopped
- 1/2 c. chopped celery
- 4 t. beef bouillon granules
- 1-1/2 t. salt
- 1/4 t. black pepper
- 1/4 t. dried oregano
- 1 c. fresh or frozen green beans
Steps
- In a large saucepan, brown beef; discard excess grease. Add the remaining ingredients, except for the green beans; bring to a boil.
- Reduce heat; cover; simmer 15 minutes or until potatoes and carrots are tender.
- Add green beans. Cover. Simmer 15 minutes or until the green beans are tender.
