Get a refreshing taste of Greece without actually going there with this classic salad. It's the perfect salad to serve with any meal.
2 c. sliced cucumber
1 c. cherry tomatoes, halved
1/2 red onion, sliced
1/4 c. Kalamata olives
1/4 c. green olives
1/2 c. feta cheese, cubed
1 T. fresh parsley, chopped
1/4 t. dried oregano
salt and pepper, to taste
2 T. olive oil
1 T. red wine vinegar
Cut the cucumbers and red onion into slices. Slice the cherry tomatoes into halves. Cut the feta cheese into cubes.
In a large bowl, stir together the cucumber slices, cherry tomatoes, red onion, Kalamata olives, and green olives; add the cubed feta cheese.
Season the salad with the oregano, parsley, salt, and pepper.
Stir together the olive oil and red wine vinegar; drizzle over the salad; toss.
Serve.
