Celebrate the season with these yummy, festive popcorn balls. They make a great snack or dessert that's similar to Rice Krispy treats, but popcorn is used instead of the cereal.
1/2 c. popcorn kernels (or about 10-15 c. popped popcorn)
1/2 c. unsalted butter
10 oz. bag mini-marshmallows
1 c. red and green Christmas M&M's
1/3 c. Christmas sprinkles
Pop the popcorn kernels using your preferred method. After popping, be sure all unpopped kernels are discarded. Add the popcorn to a large bowl; set aside.
In a medium to large pot, melt the butter over medium-low heat on the stovetop. When it's melted, add the marshmallows; stir occasionally until mixed completely, melted, and smooth. Remove the marshmallow mixture from the heat; pour over the popped popcorn; gently stir with a rubber spatula until fully coated.
When the popcorn is coated with the marshmallow mixture and has cooled, use the rubber spatula to fold in the M&M candles and sprinkles. Spray your hands with non-stick cooking spray so that your hands don't stick to the marshmallow mixture. Form popcorn balls using your hands, grabbing about a cup of the mixture and shape it into a ball with the palm of your hands. Gently press to form a ball shape. For smaller balls, use 1/4 c. to 1/3 c. mixture.
Serve when cooled.

To store the popcorn balls, wrap each one individually in plastic wrap to stay fresh. Store in an airtight container or a large zip bag up to 5 days at room temperature.
