Everyone can enjoy these cookies anytime, but especially during the holidays. They're delicious chewy and make the perfect snack, dessert or gift for the holidays.
3/4 c. powdered sugar
1 stick butter
1 egg
1 t. vanilla extract
1 t. almond extract
1 1/2 c. all-purpose flour
2 t. baking powder
pinch salt
1/4 c. powdered sugar, for rolling
Preheat the oven to 350 degrees F. Grease a cookie sheet.
In a large bowl, beat together 3/4 c. powdered sugar and butter with an electric mixer until smooth. Add egg, vanilla, and almond extract; beat until well combined.
In a medium bowl, stir together flour, baking powder, and salt; mix into the butter mixture until just incorporated.
Shape dough into 1-inch balls. Place 2 inches apart on the prepared baking sheet.
Bake until firm, about 10 minutes. Let cookies sit on the cookie sheet for 10 minutes before transferring to a wire rack to cool completely.
Spread 1/4 c. powdered sugar on a plate; roll the cooled cookies in the sugar to coat.
Serve.
