This burrata caprese is very versatile. It can be served as an appetizer or as a salad. Not only that, it's delicious, quic and simple to prepare.
2 pints (20 oz.) heirloom cherry tomatoes
2 balls burrata
1/4 c. fresh basil leaves
2 T. good quality olive oil
1 T. balsamic glaze
2 pinches flaky salt
freshly ground black pepper
Rinse and dry tomatoes; cut them in half. Place tomatoes on a platter; place the burrata in the middle.
Cut the burrata to expose the gooey center. Sprinkle on the flaky salt and some freshly ground pepper. Drizzle on the olive oil and balsamic glaze.
Serve, topped with fresh basil leaves.
This can be made up to a day in advance, but it’s so quick and easy to make, it's best to prepare right before serving.
