This minty chocolate homemade ice cream pie is perfect for birthday parties, pool parties or any kind of gathering. The hardest part is waiting for it to freeze until solid.

Ingredients

• 3 pints mint chocolate chip ice cream, softened, divided
• 1 store-bought chocolate cookie pie crust
• 1 1/2 c. crushed mint chocolate sandwich
• cookies, divided
• whipped cream, for topping

Steps

1. Scoop 1 1/2 pints of the ice cream into the pie crust; spread until smooth.
2. Sprinkle on 1 c. crushed cookies, pressing down a little so that they stick to the ice
