This minty chocolate homemade ice cream pie is perfect for birthday parties, pool parties or any kind of gathering. The hardest part is waiting for it to freeze until solid.
3 pints mint chocolate chip ice cream, softened, divided
1 store-bought chocolate cookie pie crust
1 1/2 c. crushed mint chocolate sandwich
cookies, divided
whipped cream, for topping
Scoop 1 1/2 pints of the ice cream into the pie crust; spread until smooth.
Sprinkle on 1 c. crushed cookies, pressing down a little so that they stick to the ice
cream.
Freeze until solid, about 1 hour.
Scoop on another 1 1/2 pints of ice cream. Top with whipped cream and the remaining 1/2 c. crushed cookies.
Freeze until solid, at least 2 hours.
6-8 servings.
