Celebrate the holidays with this creamy chocolate fudge with peppermint and marshmallows. It's the perfect dessert for parties and gatherings.
1 1/2 c. granulated sugar
2/3 c. evaporated milk
2 T. butter
1/4 t. salt
3 1/2 c. mini marshmallows, divided
1 1/2 c. semi-sweet chocolate chips
1/4 to 1/2 t. peppermint extract
3 T. crushed candy canes or peppermint candies (or green spearmint candy or combo of both)
Line an 8x8 inch baking pan with aluminum foil; spray with non-stick cooking spray.
Combine sugar, evaporated milk, butter, and salt in a medium saucepan; bring to a boil over medium heat, stirring constantly; boil for 4-5 minutes, stiring continually.
Remove from the heat; stir in 2 c. marshmallows, chocolate chips, and peppermint extract; stir vigorously until marshmallows and chocolate chips are melted. Quickly pour this into the prepared pan, working quickly or the fudge will start to firm up.
Sprinkle the remaining 1 1/2 c. marshmallows on top of the fudge; sprinkle the crushed peppermint candy over that. Lightly press the marshmallows into the fudge so that they stick.
Refrigerate for several hours, or until firm.
Cut into bars, 5 across and 5 down.
