These stuffed cookies will be a hit for any occasion. They're have a soft, gooey filling and a crunchy outside that makes them the perfect treat.
Ingredients
- Dough:
- 1 c. unsalted butter, at room temperature
- 1 1/2 c. light brown sugar
- 1/2 c. granulated sugar
- 1 c. jarred Lotus Biscoff creamy cookie butter, for mixing into the dough*
- 2 large eggs, at room temperature
- 1 egg yolk
- 2 t. vanilla extract
- 3 c. all-purpose flour
- 1 t. baking soda
- 1 t. baking powder
- 1 t. kosher salt
- 1 c. white chocolate chips
- Filling:
- 1/2 c. Lotus Biscoff creamy cookie butter, chilled for easier handling
- Optional Topping:
- 10 Biscoff cookies, crushed
- 1/2 c. vanilla melting wafers or chopped almond bark melted, for drizzle
Steps
- Preheat oven to 350 degrees F. Line 2 large baking sheets with parchment paper.
- Dough:
- In a large bowl, cream the unsalted butter, light brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes. Mix in 1 c. Lotus cookie butter, followed by the eggs, egg yolk, and vanilla extract until fully combined.
